This month RawSpiceBar has chosen The Andes, Peru for our spice journey. I’ve never tried Peruvian food before so I’m quite excited to see the recipes and spices for this month.

This ancho chili and smoky paprika rub is used to create a juicy, smoky Peruvian chicken, roasted in a perfectly blended marinade of olive oil, lime juice, garlic and our freshly ground spices.  This smoky, spicy blend pairs well with sausages, shrimp, chicken, tofu or hearty vegetables such as eggplant.

This spice mix has smoked paprika, ancho chiles, cumin, ground black pepper and Mexican oregano. I can tell this chicken will taste amazing! This will be on our weekend dinner menu.

Roasted Aji Amarillo Spiced Potato Wedges

The bright orange, full-bodied aji amarillo chile is the star of this spice blend.  This chile offers a lot of fruitiness given its heat level.  We’ve blended this freshly ground, dried chile with coriander, basil, mustard seed and other spices- which makes for a great coating for roasted sweet potato wedges.  This blend is also perfect for cooking rice.

I like sweet potatoes but mine never come out as crispy as I’d like. I might use the spice on some Yukon golds instead and I definitely want to use 1/2 in some rice. I love flavouring my rice.

Pink Peppercorn Blend

Originating in Peru, these pink peppercorns have a peppery bite with a sweet, fruity flavor and had a heavy influence on Peruvian cuisine.  We’ve included pink Himalayan sea salt to this blend, which pairs perfectly when sprinkled lightly on sweet dishes like ice cream, melons or chocolate or light, savory dishes such as scallops or salmon. 

This dessert sounds really good but I definitely like the sound of sprinkling this on some really good vanilla ice cream. Also I love RawSpiceBars suggestion for trying this with scallops or salmon, I think that would taste delicious.

I’m so happy with this month’s spices and recipes. I think for $6 a month this subscription is definitely worth it. I love how they give you recipes but also add other suggestions in case the particular recipe isn’t to your taste. If you’d like to get more info on rawspicebar you can click here.
